Update

Totally excited... down to 204.4 this morning! Looking forward to dropping below 200 pounds! Yay!

Another update!

I was down to 210 a few days ago; but I slipped up a bit and had some sugary stuff yesterday. Someone brought a huge tray of Christmas goodies and I had trouble passing up the Buckeyes. They are one of my favorites!

I'm back to the grind today though. I weighed in at 211.8 this morning (a little water weight fluctuation most likely). Starting this diet around the holidays was a dumb idea on my part; but I intend to stick with it!

I made some delicious pasta sauce the other night and will post the recipe for that soon. It was outstanding!

Update!

Just a quick update today! I'm down 15 pounds and so excited! It's nice to see the numbers on the scale going down! Sticking to the diet pretty good! I did cheat yesterday. I had a few white chocolate covered Oreos...those are my favorite! =/  The only other slip up I had was back around Thanksgiving for the pumpkin pie (which sounds really yummy at the moment!).

Nathan's Famous Frankfurters

I've never been a big fan of hot dogs. They were always just a blah food to me and I would only eat them if there was nothing else. My girlfriend however, has mentioned Nathan's many times (she's had them from the restaurant back in Cali) and I saw a pack at the store and grabbed them. If I'd had these hot dogs I would have been a fan from the start! They are delicious! We mad a batch wrapped in bacon and cooked in the oven. YUM!

I also made a few Jalapeño Poppers. I sliced fresh Jalapeño's in half length wise and cleaned the flesh and seeds out (use some gloves!), then stuffed them with a 50/50 mixture of cream cheese and shredded sharp cheddar and wrapped them in bacon as well.

I cooked them all in the oven at 400 degrees until the bacon looked done (about 20 minutes). I did forget to take a final picture...they were gone too fast!!

Pan Fried Tilapia

I was in the mood for something different for lunch and decided to make some Tilapia.

I started by melting 1 tbsp of butter in a skillet.
Then I seasoned a Tilapia fillet with crushed red pepper, pepper and a little sea salt and added it to the butter.

 Fry the tilapia for a few minutes on each side until there is a bit of a crust forming. Remove the fish from the pan and place in a warm oven while you prepare the sauce.
Remove the skillet from the the heat for a moment and add a little (about 1/4 c.) heavy cream and whisk it up a bit to gather the seasoning from the pan. Put back on the burner over low heat.
Continue cooking over low heat, stirring often. The sauce will begin to thicken after a minute or two. Add a handful of Bleu Cheese crumbles and stir until the cheese is melted. Remove from heat and serve!
Serve the sauce on top of the Tilapia for a delicious bite of fish. I enjoyed mine with a side of oven fried bacon and some celery with ranch dressing!


Pan Fried Tilapia with Cream Sauce

1 T butter
1 tilapia fillet, thawed
Crushed Red Pepper
Cracked Pepper
Salt
1/4 c heavy cream
2 T Bleu Cheese Crumbles

Low-Carb Mint Chocolate Chip Ice Cream

Here's one that I plan on trying soon! It has some good reviews...


Low-Carb Mint Chocolate Chip Ice Cream

2 cups cream
¼ cup water
1tsp vanilla extract
1 tsp mint extract
pinch of salt
green food coloring (optional, only if you want it to be green, otherwise it will be yellow because of the egg yolks)
4 egg yolks
12 packs Splenda (or ½ cup)
½ cup of chopped sugar-free chocolate (I like dark)
Directions

1. In a microwave safe bowl, heat cream and water until steaming (2min).
2. While cream is heating, mix everything but the chocolate together well. Add to hot cream and return to microwave until steaming, but NOT boiling (1min).
3. Follow instructions on your ice cream maker. Be sure to add chocolate half way through the process.
Nutrition

6 servings (about 1 cup) with 5g net carbs per serving

So far so good...

I'm down to 216.8 this morning, so I am seeing progress and that motivates me! I've been doing really well on the diet with no cheating at all. This alone amazes me. I have such a sweet tooth. Jaz and I were in F.S Chocolatiers over the weekend and my cravings kicked in momentarily. Again, chocolate and ice cream are the two things that I crave most (and they have both). I was really craving gummies though! Either way, I didn't get any. (Yay me!) I was looking at their sugar-free chocolates as well and was very tempted to try one; but I resisted! I asked the lady that worked at FSC about the carb content of the sugar-free content and she didn't know. She said she only knew that they were made with maltitol (a sugar alcohol/substitute). Later that afternoon we were at Target and I was perusing the sugar-free candy selection and found that the carb content of sugar-free candy is the same as regular candy! Talk about misinformation! So, no sugar-free candy for me :(

I've noticed in my food tracking that I'm not getting enough fiber so I had to look for a supplement. I don't like the powders and didn't really want to take the pills so I found some sugar-free Fiber Gummies at Walmart. (They even taste like regular gummy candies!)

On to food...

I made some pan-fried Tilapia fillets last night. I seasoned them with a premixed seasoning that has crushed red peppers, garlic, and pepper and fried them in butter. (It turned out delicious.)  I also made some steamed broccoli and fresh baby spinach sauteed in bacon. (Made some black beans and rice for the kids.) It was a delicious meal and had the fat and protein that my diet needs!

I found a recipe that I really want to make. Rib Eye Steak with a Creamy Onion Blue Cheese Sauce it looks delicious! Anyways... back to work!

Update!

I'm sticking to the diet pretty well and haven't cheated any more! Still have cravings every now and then (usually crave chocolate or ice cream) and my cravings tend to happen in the evening when I'm watching TV or messing around on the computer.

I really need to get in gear with the exercising... but I keep forgetting my clothes and shoes at home when I leave for work in the morning. (I'll try to remember in the morning!)

So after a rough few days (read: I cheated a little bit... a few Schwan's Silver Mint Bars and some cookie dough) I'm doing my best to get back on the diet train!

The Silver Mint bars are gone, as is the cookie dough...so I'm hoping that will ease my temptation to snack on unhealthy things! I haven't been doing bad at work and I haven't been having my normal cravings at work. My snacking at home and work is probably what lead to my weight gain. I'm fairly sedentary at home and at work, since I am in the maintenance department and have a bucket truck, I don't climb the ladder like I used to so I am much less active there as well.

I'm using the MyFitnessPal app on my iPhone (and the website) to track my food and water intake so that I can keep better track of the carbs that I am consuming.

For breakfast I made scrambled eggs with chopped bacon and had a Sugar Free Caramel Iced Coffee with Heavy Cream from Starbucks. For the scrambled eggs I use one whole egg and three egg whites to cut back on the cholesterol a little bit. I fried four strips of bacon chopped up and then removed some of the grease and cooked the eggs mixed with the bacon in the remaining bacon grease! It was yummy! (Sometimes I have trouble wrapping my mind around the high fat part of this diet.)

Chicken Taco Soup

This recipe came from my sister and it sounds good and should be good on the Keto diet (minus the chips)

Chicken Taco Soup

  • 2-4 chicken breasts 
  • 1 pkg taco seasoning 
  • 1 can black beans 
  • 1-2 cans corn 
  • 1 can chopped green chiles 
  • Chili powder and cumin, to taste 
  • squirt of lime juice 
  • Cilantro 
  • 1/3 c. Chopped Onion 
  • Garlic 
Cook & shred the chicken. Add all the other stuff to the pot & heat. Top with chips, sour cream, cheese, cilantro or whatever.

Today's Workout 11/7/2011

I signed up for a gym membership a few months ago and went for a few weeks and slacked off. I'm going to get back into the groove and go at least four times a week! I'm starting slowly and only did the stationary bike today. I rode for 30 minutes and did 6.6 miles on the random hills course at Level 11. =D It got my heart rate up quite a bit on the top of the hills!

Poached Salmon

Poached Salmon Recipe

INGREDIENTS

  • 1 to 1½ pounds salmon fillets
  • ½ cup dry white wine (a good Sauvignon Blanc)
  • ½ cup water
  • A few thin slices of yellow onion and/or 1 shallot, peeled and sliced thin
  • Several sprigs of fresh dill or sprinkle of dried dill
  • A sprig of fresh parsley
  • Freshly ground black pepper

METHOD

Put wine, water, dill, parsley and onions in a saute pan, and bring to a simmer on medium heat. Place salmon fillets, skin-side down on the pan. Cover. Cook 5 minutes or to desired done-ness. Do not overcook. Serve sprinkled with freshly ground black pepper.
Serves 2-4.

Beginning the first day...

I started off the morning with a bowl of oatmeal with frozen berries for some flavor and a little Splenda to sweeten it up. I packed some almonds, jerky, baby carrots, and a few boiled eggs to eat through out the day.

Hoping I can keep the junk food cravings away!

Hello world!

My girlfriend and I are starting a new low carb/healthy foods diet this week and plan on posting our progress, recipes and thoughts here! Fun for you, huh?
