Sun-Dried Tomato Cream Sauce with Prosciutto

  • 1 cup Heavy Cream
  • 3 tbsp Butter
  • 1/2 cup Shredded Mozzarella
  • 2 tbsp Shredded Parmesan
  • 1/4 cup Sun-Dried Tomatoes (finely chopped)
  • 1 oz Prosciutto (finely chopped)
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Crushed Red Pepper
  • salt and pepper to taste

In a small sauce pan add heavy cream and butter over low-medium heat. Add sun-dried tomatoes, prosciutto, garlic, crushed red pepper, salt and pepper. Stir until it begins to steam and add mozzarella and parmesan cheese. Continue stirring until the cheese is melted and well combined. Allow to simmer over low heat for a few minutes until the sauce reduces a little bit and begins to thicken.

This is great over a piece of chicken breast (or over pasta if you are also feeding a non-keto friend).

You can serve this over shirataki noodles. just drain, cook in microwave for a couple of minutes, drain again, and then cook for another minute and a final drain. top with alfredo or this sauce. low carb. noodles are in the vegetarian section of the store or the asian section in big grocery stores.
