Quick Keto Dinner

Bacon Wrapped Nathan's Beef Franks


These are one of my favorite easy meals on the Keto diet!
Preheat your oven to 400° and cover a baking sheet with foil and a piece of parchment paper. Wrap each hot dogs with a piece of bacon each and place on baking sheet. (Thin cut bacon works best!)


Cook for 20-25 minutes (or until the bacon looks as done as you like it). These are great with a little shredded cheese sprinkled on top of the hot dogs right when you take them out of the oven! I usually have these with a side of broccoli or some cauliflower salad.

Grilled Ribeye Steak with Onion Blue Cheese Sauce


  • Ribeye Steaks
    This makes enough sauce for 2 to 4
  • 4 Tbsp Butter
  • 1 Small Onion
  • 1 c Heavy Cream
  • 1/2 c Crumbled Blue Cheese
Melt butter in a small sauce pan over medium heat. Add onions and cook them until they become somewhat translucent. While the onions are cooking, season your steak(s) with salt and pepper and start them on the grill or broiler as you normally would. (You don't need any other seasonings as this sauce is very flavorful!)

Lower the heat a bit and add the heavy cream to the onions and heat until it is steaming. Add the blue cheese and cook for a few minutes until the sauce thickens up a bit. (Don't forget to check on your steak!) Serve the sauce over the steak for a creamy delicious treat!

Sun-Dried Tomato Cream Sauce with Prosciutto



  • 1 cup Heavy Cream
  • 3 tbsp Butter
  • 1/2 cup Shredded Mozzarella
  • 2 tbsp Shredded Parmesan
  • 1/4 cup Sun-Dried Tomatoes (finely chopped)
  • 1 oz Prosciutto (finely chopped)
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Crushed Red Pepper
  • salt and pepper to taste



In a small sauce pan add heavy cream and butter over low-medium heat. Add sun-dried tomatoes, prosciutto, garlic, crushed red pepper, salt and pepper. Stir until it begins to steam and add mozzarella and parmesan cheese. Continue stirring until the cheese is melted and well combined. Allow to simmer over low heat for a few minutes until the sauce reduces a little bit and begins to thicken.

This is great over a piece of chicken breast (or over pasta if you are also feeding a non-keto friend).

Another update!

I was down to 210 a few days ago; but I slipped up a bit and had some sugary stuff yesterday. Someone brought a huge tray of Christmas goodies and I had trouble passing up the Buckeyes. They are one of my favorites!

I'm back to the grind today though. I weighed in at 211.8 this morning (a little water weight fluctuation most likely). Starting this diet around the holidays was a dumb idea on my part; but I intend to stick with it!

I made some delicious pasta sauce the other night and will post the recipe for that soon. It was outstanding!

Update!

Just a quick update today! I'm down 15 pounds and so excited! It's nice to see the numbers on the scale going down! Sticking to the diet pretty good! I did cheat yesterday. I had a few white chocolate covered Oreos...those are my favorite! =/  The only other slip up I had was back around Thanksgiving for the pumpkin pie (which sounds really yummy at the moment!).

Two eggs fried in butter with some thick oven baked bacon slices. Yum!

Nathan's Famous Frankfurters

I've never been a big fan of hot dogs. They were always just a blah food to me and I would only eat them if there was nothing else. My girlfriend however, has mentioned Nathan's many times (she's had them from the restaurant back in Cali) and I saw a pack at the store and grabbed them. If I'd had these hot dogs I would have been a fan from the start! They are delicious! We mad a batch wrapped in bacon and cooked in the oven. YUM!

I also made a few Jalapeño Poppers. I sliced fresh Jalapeño's in half length wise and cleaned the flesh and seeds out (use some gloves!), then stuffed them with a 50/50 mixture of cream cheese and shredded sharp cheddar and wrapped them in bacon as well.

I cooked them all in the oven at 400 degrees until the bacon looked done (about 20 minutes). I did forget to take a final picture...they were gone too fast!!
